The Secret Sauce of Chinese Cuisine


Food is an essential part of China’s culture, reflecting both its values and history. One particular sauce, Lu Shui, has special meaning. A version of the dish can be found in every region of the country and its history dates back centuries. In this audio story, a chef in Beijing describes how he preserves a bit of each batch of sauce he makes out of respect for his ancestors.
